YUMMY!

Although Andy will eat whatever I make (bless his heart) I am getting sick of making the same things over and over again. This week I made it a goal to use a new recipe every night. Tonight I made Chicken Enchiladas (Recipe curtosy of Capo II 2002 Girls Camp fundarasier cookbook, specifically momlark)and they were SO good and SO easy! Although I don't think anyone will actually use this recipe I am posting it anyways, because I think everyone should try it.

Chicken Enchiladas
2 1/2 cups cooked chicken
2 cans cream of chicken soup
1 Large can of milk
1/2 onion (I used a cup of frozen chopped onions because 1. I hate chopping onions and 2. It is easier)
12 Flour tortillas
2 1/2 cups Grated Cheese

Just saute the onion (I used butter) then add the soup and milk, stir till hot. Roll cheese and chicken in the tortillas and put in pan. Pour sauce on top and cheese for garnish. Bake at 350 for 25 minutes.

I'll let you know how my other meals turn out!! I can't wait to eat leftovers for lunch tomorrow!

I am a nerd!

My mom, dad and sister know all too well how much I LOVE to be organized and buy things to help me organize. One year I got a gift certificate to Office Max for Christmas and you would never know how excited I really was. I enjoy post it notes and writing down everything. Over the past weekend Andy has asked me several times what I wanted for graduation. Today as I was writing in my make-shift planner it dawned on me, I wanted a shopping spree to Franklin!! I have had franklins in the past during high school and college, but nothing official. After work I headed over to Franklin and it was the best ever! Andy offered to go, but I told him that I wanted to see all my options and figure out exactly what I wanted, and I didn't really think he would have that much fun. But I did!! I got to pick out my binder, pages, tote and the perfect pen! I decided that I didn't want a bulky planner because I want to keep it in my purse and it is heavy enough as is. I found the cutest tote that can work for both a work bag and a purse. The best part was coming home and putting it all together. So yes, those who read my blog, I am a nerd who has to be organized at all times.... but it was one of the best gifts!! Thanks babe!

But seriously..

BYU Graduate!

This past weekend we went to Utah for graduation. Although we will all be very tired tomorrow from such a busy weekend, we had the best time. I got to walk with my freshman college roommate Kara and my cousin Whitney. Our weekend was scheduled around when to eat and where. Some of the highlights were Pizzeria 712, Magleby's Fresh, Original Pancake House, Chipotle, Aunt Traci's Famous Flank Steak, BYU Chocolate milk and Charlies Supreme. We stayed in Draper with my parents, Ashley and Dallas and had the giggles every night. For those of you who have never experienced the "Bruce Giggles" I'll let you know how it goes. Anyone can say anything and everyone laughs. To us, anything and everything is funny. We pretty much had them all weekend long and laughed our way through the trip. A BIG thank you to everyone who came!! Here are some pictures from the actual graduation.

It is perfect for washing your face, showering, and just getting your hair out of your face. Here is Ash and I with ours on!


Before we left Utah I went to breakfast with all my London Roommates. We had the best time reminiscing and catching up!

Nordstrom Rack = New BFF

The only Nordstrom Rack I have been to is the one at South Coast. I have always liked it, but never found anything worth while. My dad on the other hand has found great treasures like an Armani Suit for half off. Yesterday I went to Henderson to go to a few consignment stores and Home Goods to find a few nik-naks for our house. I was very frustrated because there was nothing I liked. I was also in search for some capris and business shorts because I am in desperate need now that summer is approaching. It dawned on me while I was in Henderson that somewhere there is a Nordstrom Rack. I was so mad that I didn't look it up before I left home, but figured oh well maybe next time. As I am driving down the street I get the oh my gosh I'm gonna pee my pants type of pain and pull off into the nearest shopping center where I see a Target. As I am driving to the target guess what was sitting right next to it? NORDSTROM RACK! I was so excited! Here are some of my great finds! The best is I sold these same items last summer for full price!

I found some other great finds including an Ellen Moss blouse for $16.97 People Liberation Jeans: $59.97 and some Volcom jeans, pants, and shirt for Andy for a total price of $75!!!

This Nordstrom Rack is seriously the best! Everything is categorized by department and well kept!! I loved it and am now a frequent shopper!!

Meet JuWon

Many people didn't know that we had a dog so I decided to do a post about JuWon Howard Coons the Wonder Puppy Dog! Andy got JuWon while we were dating and for the past year or so he has been living at the Dental Office. Now that we have a house he has been living with us. He is very sweet and although a Black Lab isn't my first choice of a dog, he doesn't come in the house and is very low maintenance. I could only find two pictures that are on our computer of Juwon-ie boy, both from when he was a puppy.

Plumbing 101


Why is it that right when you sit down to do something, the urge to go to the bathroom hits? I sat down for the first time today to look up a few things on the internet when all of a sudden I had to go to the bathroom. This was not surprising seeing how I am getting over a kidney infection and the keeps doctor telling me I needed to drink more water. I usually only drink 1 maybe 2 bottles of water a day, mainly because I just don't like it. So with drinking 2 gallons for this past week I have to go ALL THE TIME! Anyways, I go to flush and instead of the water going down and around it starts to rise! I start to panic because 1. I don't know what in the world to do 2. The plunger is no where to be found and 3. I started having flashbacks of a time at Youth Conference when Ashley, Ani and I were all sharing a room at Dixie college in their dorms and our toilet malfunctioned in this same manner. Keep in mind this was the nastiest place I think I have ever stayed Usually I would just call for Andy and have him fix it, but he was at the park playing baseball with our Nephews.... so what do I do you ask? Hop in the car and race to the park to get Andy. I get to the park and am running frantically to find Andy. Who knew hundreds of families went to the park on Friday night? One guy even stopped me and asked if I was ok. I couldn't find him and thought... were they in the backyard and I had no idea?? I start heading back for the car when out of the corner of my eye I see little Ju-Wonie boy. I run to Andy and tell him what is going on and he rolls his eyes and says, "Is it still running?" I reply, "Uh, yeah I don't know what to do!!"

Not to worry, by the time he got here it had stopped, he fixed the toilet and cleaned up the puddle of water. And not to worry we had a Plumbing 101 session for the next time this happens. We also have invested in a new Plumber!!

I finished it!

For my birthday last year Andy bought me a new scrapbook with all sorts of pages to that I could scrapbook my Study Abroad in London. My goal was to have it finished before the one year mark of me leaving. (May 1) Tonight I finally finished it! Although there are a few things that need work on, all the pictures are in and it turned out SO cute! I'm not sure who will look at it besides me, but I love it!!

Not Impressed...

**Discloser... I'm sorry in advance if you liked this show**
Last night I Tivo'd Step it up and Dance... I tend to like Bravo reality shows Project Runway, Real Housewives, Top Chef. However, I was NOT impressed at all with Step it up and dance!! Here are only 6 reasons: (Yes I could have come up with more)

1. They didn't show the auditions! I love watching the auditions on SYTYCD (So you think you can dance) It is so funny because people really think they are good, and sometimes they just aren't.
2. I realize the show is called Step it up and dance... but every time the judged didn't like how the dancer performed, they had to say "You need to Step it up"
3. The dancers were not that good... their free style paled in comparison to SYTYCD Contestants!
4. Mary Murphy wasn't a judge screaming or letting anyone join the hot tamale train.



5. Cat Deely is a WAY better host than Jessie Spano.


6. Lastly... Benji wasn't there!


My question is.... when is the BEST dancing show So You Think You Can Dance coming back?????
