Although Andy will eat whatever I make (bless his heart) I am getting sick of making the same things over and over again. This week I made it a goal to use a new recipe every night. Tonight I made Chicken Enchiladas (Recipe curtosy of Capo II 2002 Girls Camp fundarasier cookbook, specifically momlark)and they were SO good and SO easy! Although I don't think anyone will actually use this recipe I am posting it anyways, because I think everyone should try it.
Chicken Enchiladas
2 1/2 cups cooked chicken
2 cans cream of chicken soup
1 Large can of milk
1/2 onion (I used a cup of frozen chopped onions because 1. I hate chopping onions and 2. It is easier)
12 Flour tortillas
2 1/2 cups Grated Cheese
Just saute the onion (I used butter) then add the soup and milk, stir till hot. Roll cheese and chicken in the tortillas and put in pan. Pour sauce on top and cheese for garnish. Bake at 350 for 25 minutes.
I'll let you know how my other meals turn out!! I can't wait to eat leftovers for lunch tomorrow!

It simmers for about 45 minutes and makes your house smell delicious. I'm all for blog-recipes, so keep them coming! Enjoy your left overs :)
Hi Jillian! This is Aimee Cooper, I don't know if you remember who I am or not, but we've met a few times at enrichment and in relief society. I was checking out our relief society blog trying to catch up on what I missed today home sick with our 3 boys and noticed your blog. Which I LOVE by the way! I too find the Nordstrom Rack to be one of my best friends here in Vegas and I enjoy organizing or rather I appreciate everything a little more when it is organized nicely. I was also feeling badly I didn't get the chance to say hello to you and Andy last night at Charles and Angie's party and was looking forward to seeing you at church today- which obviously didn't happen. So, when I saw your blog I thought I would say hello and let you know I wanted to say hi last night, but missed you guys before you snuck out.
